hey all. today started off awesome because i got to sleep in. when i woke up, well-rested, my creative thoughts were just starting to buzz. and so i came up with this gem for breakfast...
oatmeal with figs and balsamic reduction
i realize how weird it sounds to put vinegar on oats. but hey, if people go all kinds of crazy with savory oats, this is really quite tame in comparison. and so fantastic. here's how it goes:
first step- make the balsamic reduction. simply glug some balsamic vinegar into a saucepan and bring to a boil. a note here-- be careful about breathing in right over the pot. the vinegary, winey smell gets super strong.
turn it down to simmer and let it reduce until it has come to your desired thickness. now is also a good time to add in a touch of sugar if you like.
and there you have it!

*coconut milk
*vanilla
*balsamic reduction
*pepitas
*turbinado sugar
this was a bright, delicious bowl of oats. the vinegar adds all these notes that make your tongue sing. slightly sweet, slightly tart, this is one i'm very excited to eat again.
